Super Saturday Shopping may not occur on Saturday But I do plan to get it done before the sales go off on Tuesday night. I am really looking forward to the whole chickens which are on sale at Albertsons. The limit for the chickens is 4 and I may have to stick to that because of space. I am thankful for the eating from the pantry challenge which has helped me empty some of my freezer. I still have lots of Peaches in there and I hope to use some of them up on baking day.
I have been thinking alot lately to the difference Couponing and Looking for deals has made for our family and I am excited. As I have said before we used to have a budget of $100 a week and now it is half that. I like to challenge myself to get it even less. I love the challenge. Although sometimes it is annoying, all in all I am so thankful for the way it has pushed me.
Just last night I made one of my favorite meals Homemade biscuits, suasage gravy, and Hashbrowns ( I didnt say one of the most nutritious) and I had everything I needed. The Suasage was in my freezer from a couple of months ago when I found it on clearance for $1.
Earlier this week I had a meeting so dinner had a deadline to be ready. I was not sure going in what I would make and I was considering just going out to eat. But I looked in my freezer, refrigerator and Pantry and Came up with Enchilada Casserole.
The best part of that meal to me was the fact that most of that stuff would have been thrown away. I used leftover Refired beans, 1/2 lb ground beef from the freezer, Tortillas from last weeks baking day (they were getting hard), Slices of cheese that I hate the taste of (turned out really good, Turns out cheaper is not always better it was Kingsoopers brand) and A can of enchilada sauce. I turned it into a casserole layering it like lasagna. I topped it off with some Mozzeralla chese and it was AMAZING!!! I was so excited, I saved us money, and it tasted Great!
I hope this will be a challenge to you lool around your house and see what you can make before you resort to going out to eat because you think you have nothing. We are truely blessed to have a stock pile of food growing, and We are learning how to save more money!
