Breakfast:

Lunch:
Roasted Chicken Pitas with Salad mix
Ham Pitas and Pitas
PB&J on Homemade bread Peaches
Leftovers
Pancakes and Eggs and Applesauce
Pigs in the Blanket and Peaches
Dinner:
BBQ Chicken Pizza
Pullapart chicken over Home made biscuits, Salad, Pie
Roasted Chicken with Rice and Carrots
Chicken Enchilada Casserole
Hamburger over Egg Noodles
That is all I have planned so far. Can you tell we have a lot of Chicken at our house right now.

Tomorrow is Baking Day!
My freezer is pretty bare right now when it comes to croissants and muffins and pigs in the Blanket. So can you guess what is on my list?
Here goes:

Rice
Croissants
Blueberry muffins
Tortillas
Pitas
Pancakes
That is quite a list considering we are behind on school since we took off a lot for our vacation, so I will see what I can get done while doing school and making sure I am ready for a meeting @ 6:30! Whew I am already tired thinking about it. I am going to try to get up early tomorrow to start this daunting task.

This week we will be getting ready for our vacation and I will be resting my feet as much as possible so I will be ready. For those of you who do not know I have bunions that I have had since I was 7 and they are really acting up right now so I will be taking it easy around here. Now on to the Menu:

Peanut butter banana smoothies
Lunch:

Chicken Nuggets and Fruit
Tostadas w/ refried beans and lettuce and tomatoes
Pigs in the Blanket
Peanut butter and Jelly, apples and carrot sticks
Leftovers
Dinner:
Chicken Tacos w/ refried beans
Roasted Chicken w/ corn and Croissants
Hamburger helper and corn
Chicken BBQ Pizza
Pancakes and Eggs, Fruit
Sub Sandwich w/turkey
Baking Day Plan:
As I mentioned above with my feet hurting I am not sure what I will get done, But I am going to have a plan anyways so I am prepared if I feel good enough.

Banana Muffins or Banana Bread we shall see what I feel like at the time ;)

The Full menu will come soon. Tommorrow will be my normal baking day and there are some things on my list to make. It has been a long day so I will keep it short so I can get to bed.

and Pigs in the Blanket (again) We cant seem to keep these around. lol
Cook up Sausage (crumble some, Patties out of the others)
Cook up Beef
Make spaghetti sauce for diner (Put in crock pot)
Cheese Bread (refrigerator)
Mashed Potatoes (freeze)
Maybe Peach cobbler if I have time!

Today I am going to attempt to bake some things, I have VBS tonight where I am in charge of snacks so I may not get to all of this because I do not want to be exhausted before I get there.

Amish Bread- second rise
Pigs in the blanket- didnt get to them today.
As i said I may not get it all done, but I will update you'll through the process.


Well I am back from my mini vacation with family, and i have missed baking and menu planning and I plan to get started again this week.
So here is what I am planning for this week:
Breakfast
Cereal x3
Muffins (from Freezer) x2
Scrambled eggs and Toast
Waffles (from Freezer)
Lunch
Homemade pigs in a blanket, cucumber slices
Baked potatoes with cheese and broccoli
Macaroni and cheese, fresh spinach from the garden
Tuna sandwiches with Hard boiled eggs, sliced cucumber
Outing with Church
Bean Burritos With home made tortillas
Dinner
Turkey BBQ Pizza and Garlic cheese bread
Roasted chicken Garlic cheddar mashed potatoes
Talapia, with rice and mangoes
Turkey Spaghetti
Chicken or turkey enchiladas ( using home made tortillas!) refried beans
Nachos ( youth Coming over!)

Prep Macaroni and cheese
I am going to try to fill up my freezer with special baked goodies today. I enjoy doing a baking day every week or so, to keep my freezer stocked with a variety of things. Having my freezer stocked with muffins or waffles helps us not to eat cereal EVERY DAY! So Who is going to join me in this adventure?
My list of things to make today is pretty small since I do have other errands to run today for my church. So here goes:
Waffles
Pumpkin Muffins
Apple Sauce Muffins
Raspberry Muffins
40 Minute Rolls
Turkey Spaghetti Bake
I might try and bake some brownies too depending on how fast I can get this done, I will be going out of town next week and I want there to be good things for the road and good things for my hubby who will be staying here.
I did not get all of my baking done today, there were some more pressing personal things to do. But I DID get to make the Pumpkin Muffins, and the Amish bread both were very good, I will hopefully post a recipe soon.
